Daniel Bedeleanu ac1703e6c2 fix: set DATA_DIR and LOGS_DIR environment variables in start_server.sh ...

- DATA_DIR=./data points backend to correct config location
- Ensures ldap_config.json and database are found consistently
- Matches docker-compose setup
