chore: replace macOS commands with Linux equivalents in start_server.sh

Browse Source 
- Remove /opt/homebrew/bin PATH injection (macOS Homebrew specific)
- Replace ipconfig with hostname -I for IP detection (Linux native)
- Add fallback to 'localhost' for edge cases
